Dining at The Lighter Collection is both an exploration and a celebration—of Belize, of seasonality, and of craftsmanship. In 2020, Director of Food & Beverage Chef Stephen Lighter and Chef Leon Cerredo reimagined our culinary identity from the ground up. Both alumni of the internationally acclaimed French Laundry, they bring Michelin-starred training and a shared creative vision to the table—fusing refined technique with deep respect for local ingredients.

From tropical fruit and just-caught seafood to wild herbs and house-baked breads, every plate reflects the richness of Belize’s land and sea. Our menus elevate the familiar through precision and thoughtfulness, telling stories of place and season in every bite.

We privately import boutique wines from Northern California and artisanal tequilas
directly from Mexico. Our bar program features house-made bitters in seven distinctly Belizean flavors, and every pastry, loaf, and dessert is crafted from scratch each day.

Whether you’re savoring a jungle-to-table meal at Gaïa’s Five Sisters Restaurant or lingering over seafood by the sea at Matachica’s Mambo Restaurant, the experience is deeply rooted in place and designed to nourish.
